Brown Butter Pistachio Chocolate Chunk Cookies

The children and me They were recently on a cookie experiment. These brown butter chocolate cookies are sprinkled with pistachios. They are sweet and salty in every bite and have layers of flavor. A new set won’t last long here!

Brown Butter Chocolate Chunk Cookies are thick and chewy with crisp edges and a soft center. I swapped out a few ingredients to make this dessert a little healthier, but they’re still a treat we enjoy in moderation.

Salty, sweet, crunchy, chewy… you get all the flavors and textures in one bite. Instead of brown sugar, I used coconut sugar here. It tastes the same, though Coconut sugar It’s a less processed option and has unique caramel undertones that add to the cookie. I added some collagen powder for a subtle protein boost.

Dark chocolate chips provide a bitter bite in every mouthful and add some healthy polyphenol antioxidants, magnesium and micronutrients. They are made with sea salt which provides electrolytes and is a nice contrast to the sweet cookie. And the pistachio pieces are just the icing on top. They are salty but give it a unique taste.

One of the biggest differences you’ll notice is that these use brown butter instead of regular. It offers such a rich taste, almost like caramel. Brown butter is easy to make, but you’ll want to keep a close eye on it as it cooks. You want to cook them (stirring constantly!) until they start to brown and start to smell good. Take it off the stove at this point or you’ll end up with burnt butter, which doesn’t taste good!

Tips for making Salted Pistachio Chocolate Chunk Cookies

When mixing the flour, be sure not to overmix the flour, as this will overwork the gluten proteins and create tough cookies. If the dough feels too soft after mixing, refrigerate for 15-20 minutes before baking to prevent over-spreading. Even for thicker cookies, refrigerate the dough for 30 minutes before serving.

Brown Butter Pistachio Chocolate Chunk Cookies

These delicious chocolate chip cookies have extra flavor thanks to frosted pistachios and aromatic brown butter.

  • Melt the butter over medium heat, stirring constantly until it foams and turns golden brown (4-5 minutes), then remove from heat and let cool for 20-30 minutes.

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.

  • Beat together the cooled brown butter, coconut sugar and maple syrup, then add the eggs and vanilla and beat until smooth.

  • Mix the flour (all-purpose or 1:1 gluten-free), collagen if using, baking soda and salt until combined, then fold in the chopped pistachios and dark chocolate.

  • Take the dough (about 2 tablespoons each) on the prepared baking sheet, first chill it for 15-20 minutes, if the dough is soft.

  • Bake for 10-13 minutes until the edges are golden and the centers look slightly underdone. Sprinkle with coarse sea salt and cool on a rack before serving.

Refrigerate the dough for 30 minutes before rolling out the dense cookies.

Shelf life and storage

I made two of these to save some for later. The dough freezes well. Pour and cool balls, then bake directly from frozen, add 1-2 minutes to baking time.

Store the cookies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
