Beef in the grocery store sits on an unrefrigerated shelf next to potato chips and granola bars, and that’s a strong instruction on how to store it. That’s not an accident or a food safety shortcut. How the jerky is made is the whole point. Homemade jerky doesn’t get the same guarantee, and that’s where most of the real confusion comes from the jerky cooler.

Should beef jerky be refrigerated?

Short answer: No, not properly sealed commercial jerky. It is specially dried to remove enough moisture that bacteria cannot grow, which is why it is stable at room temperature in the first place. Refrigeration is optional for commercial jerky, useful to slow fat transfer and prolong flavor after opening the bag, but not required for safety. That’s the whole mechanism behind jerky sitting safely on a shelf: it’s functionally too dry for bacteria to use, the same principle behind other shelf-stable foods like crackers or raisins, just applied to meat.

The cooling that really changes

Since bacteria is not a limiting factor in commercial jerky, refrigeration does not solve a safety problem. What it helps do is slow down fat oxidation, the gradual chemical reaction between fat and oxygen that makes jerky taste stale or rancid over time. A 2024 peer-reviewed study of commercial beef and dried meat products found measurable lipid oxidation associated with rancidity, and cold storage is a standard and established way to slow this oxidation reaction in meat products in general. In practice, this means that refrigerating opened jerky is worth doing if snacking slowly, but skipping it won’t make an improperly dried sealed bag unsafe.
