I do it regularly Homemade mayo And I often make different flavors like sriracha or mayo with adobo seasoning. I use so many adobo spices that I started making them in bulk at home. It’s delicious with everything from meats to vegetables to dips.

What is adobo seasoning?

Adobo seasoning is a mixture of garlic, oregano, pepper and other spices. It is commonly used in Latin American, Caribbean and Filipino cooking to flavor everything from meats to vegetables and sauces. Adobo is so versatile to use as it usually doesn’t have a heavy and sweet taste.

It’s an all-purpose seasoning that I add to meats, soups, seafood, eggs, in my kitchen. roasted vegetables, And many other foods.

The word adobo comes from the Spanish word “adobar” which means “to marinate”. There are many variations of this condiment, including liquid sauce versions that often include vinegar. The basic ingredients are garlic, black pepper, turmeric and oregano, although other spices may be added (I add others to my variation).

How to use adobo seasoning

This combination of spices adds depth to dishes without overpowering them, and it’s versatile enough to use on practically everything. You can mix it while cooking, or use it as a dry rub on meats. It also makes a delicious marinade when mixed with oil, orange juice, lime juice or vinegar. Add just enough liquid to make a paste and mix with beef, poultry, fish, etc.

Here are some other ways I use adobo seasoning:

  • For marinades Meat or chicken
  • All-purpose seasoning on seafood
  • On grilled meat and vegetables
  • In all kinds of soups
  • In omelettes, quiches or other egg dishes
  • with guacamole
  • Mixed in homemade mayo for a twist.

Tips for making adobo spices

Adobo seasoning mixes add salt so they are all in one seasoning when cooking. If you want, you can leave out the salt or reduce the amount. This makes it easy to control The amount of salt It is added during cooking, especially if you use this with other salt flavors.

The recipe calls for black or white pepper. Each one has a unique flavor, but they work in adobo seasoning. When I do this, I prefer to use a mixture of both.

Shelf life and storage

As with any spice, this one tastes best when stored in a cool, dark place away from direct light and heat. Just above the stove is not the best place! It will stay fresh for about six months if stored properly. If your family loves it as much as we do, feel free to double the batch!
