Easy Crockpot Salsa Chicken

This is a very easy slow-cooker salsa chicken recipe that makes a versatile meal. It tastes very similar to the chicken used in Mexican restaurants Chicken Taco Salad. My kids eat it plain, but I love it on a big salad with avocado and sour cream!

Crock Pot Salsa Chicken has a fajita flavor and tastes great on salads, quesadillas or in burrito bowls. This easy recipe is naturally gluten-free and makes for an easy weeknight dinner. We often eat out for a quick lunch.

This recipe freezes and reheats very well for easy meal prep. It makes a great packed lunch or can be doubled up later for a quick meal. I like to pack it like a mason jar salad by putting some in the bottom of a quart mason jar. Top with sour cream, salsa, cheddar cheese, avocado and a final salad. Toss the salad upside down for 2 seconds on the go.

Salsa Chicken Ingredients

This chicken dinner is super easy and includes some shredded chicken, spices, and a pot of salsa. I have listed all the spices in the recipe, but you can use up to 3 tablespoons. Homemade taco seasoning Blend it instead for a quick preparation. Our family uses chicken breast because that’s what I usually have on hand, but skinless chicken thighs work just as well and add even more flavor.

For a quick pot version, use the recipe below but add 1 cup chicken broth during cooking. For frozen chicken, cook for 15 minutes and release natural pressure. If you are using boiled chicken, reduce the cooking time to 10 minutes and release under natural pressure.

What to eat with salsa chicken

You can eat salsa chicken as a vegetable (or salad) or use it as a protein in other dishes. Here are some ideas:

  • Black beans or pinto beans
  • Cilantro
  • Chopped jalapenos
  • Pour some cream cheese
  • Top with guacamole
  • Add one lemon juice

There are many different ways to cook this chicken. Sometimes I make a big batch on the weekend to save on time. Then I can reheat it and use it in different dishes during the week. Like enchiladas for dinner on Monday, then salsa chicken salad on Wednesday. Mix and match the best for more variety!

Crockpot Salsa Chicken Recipe

This easy chicken recipe is easy and very versatile. Enjoy it on top of a salad, or as a protein for other dishes.

  • Place boneless skinless chicken breasts (or thighs) in a slow cooker and sprinkle with all the spices.

  • Pour the salsa over the chicken.

  • Cook on low heat for 7-8 hours until soft.

  • Before serving, shred the boiled chicken with forks.
