This is a very easy slow-cooker salsa chicken recipe that makes a versatile meal. It tastes very similar to the chicken used in Mexican restaurants Chicken Taco Salad. My kids eat it plain, but I love it on a big salad with avocado and sour cream!

This recipe freezes and reheats very well for easy meal prep. It makes a great packed lunch or can be doubled up later for a quick meal. I like to pack it like a mason jar salad by putting some in the bottom of a quart mason jar. Top with sour cream, salsa, cheddar cheese, avocado and a final salad. Toss the salad upside down for 2 seconds on the go.

This chicken dinner is super easy and includes some shredded chicken, spices, and a pot of salsa. I have listed all the spices in the recipe, but you can use up to 3 tablespoons. Homemade taco seasoning Blend it instead for a quick preparation. Our family uses chicken breast because that’s what I usually have on hand, but skinless chicken thighs work just as well and add even more flavor.
For a quick pot version, use the recipe below but add 1 cup chicken broth during cooking. For frozen chicken, cook for 15 minutes and release natural pressure. If you are using boiled chicken, reduce the cooking time to 10 minutes and release under natural pressure.
