Does Coconut Milk Need to Be Refrigerated? Canned, Carton & Homemade

Does coconut milk need to be refrigerated? It depends on what type you have and whether it has been opened or not. Canned coconut milk does not need to be refrigerated before opening. Coconut milk from the shelf carton does not need to be chilled before opening. The coconut milk in the refrigerated carton should be cold at all times. And all three types should be refrigerated immediately after opening.

Short answer: Shelf-stable carton: Do not refrigerate until opened, then refrigerate immediately and use within 4 to 7 days (can) or 7 to 10 days (carton). Refrigerated carton: always keep cold, use within 7 to 10 days after opening. Homemade: Refrigerate immediately, use within 3 to 5 days.

How long does coconut milk last?

The FDA’s Safe Food Handling Guidelines recommend keeping perishable foods outside the temperature danger zone (40°F to 140°F) and refrigerate opened dairy alternative products immediately. Once a coconut milk is opened, this guidance applies regardless of how it was previously stored.

🥫 Canned coconut milk: before the pantry, after opening the refrigerator

Unopened canned coconut milk is shelf stable and does not require refrigeration. Store the cans in a cool, dark pantry away from heat sources and they will keep for 2 to 5 years. Avoid storing cans near the stove or in an uninsulated area, as heat accelerates deterioration over time.

After opening a can, it must be cooled. Transfer leftover coconut milk to an airtight container instead of refrigerating it in the original can. The metal in the lid of the can can enter the acidic contents when air is introduced, affecting the taste and quality. A glass jar with a tight lid is ideal. Label with opening date and use within 4 to 7 days.

📦 Shelf-stable cardboard: same rules as cans

Shelf-stable cartons, the kind sold in the non-refrigerated aisle, use aseptic containers that keep coconut milk stable at room temperature for 6 to 12 months. No refrigeration required until opening.

After opening the carton, treat it as you would open coconut milk: refrigerate, seal tightly and use within 7 to 10 days. If the carton does not close tightly, transfer the contents to an airtight container.

🧊 Refrigerated carton: always keep cold

Cartons sold in milk cartons are not aseptically packaged and must be refrigerated at all times, even before opening. If you bought it cold, keep it cold. Do not leave on the counter before use.

After opening, use within 7 to 10 days and store in the back of the refrigerator where the temperature is coldest and most consistent. The general rule of food safety applies here: if it’s been left at room temperature for more than 2 hours, throw it away.

🥥 Homemade Coconut Milk: The most perishable

Homemade coconut milk is free of preservatives, stabilizers and commercial processing. It should be refrigerated immediately and used within 3 to 5 days. Store it in a closed glass container. It will separate quickly, so shake before use.

Do not leave homemade coconut milk at room temperature for longer than necessary when cooking. Other perishable alternative dairy products follow the same 2 hour room temperature limit.

🌡️ What happens if the opened coconut milk becomes too warm

Opened coconut milk becomes inhospitable to bacteria left at room temperature. Do not leave outside for more than 2 hours (or 1 hour if the room is above 90°F). If you’ve used coconut milk in cooking and have leftover milk sitting on the counter, it’s still fine to refrigerate and use later, as long as it doesn’t exceed that 2-hour window. Beyond that, ignore it.

❄️ Freeze coconut milk to extend its life

Freezing is a practical option for leftover coconut milk that you won’t use in the fridge window. The main thing to know is that coconut milk changes texture after freezing and thawing. It becomes grainier and softer due to further disruption of the fat-water emulsion. It’s still great in cooked dishes like curries, soups and baked goods, but it’s not ideal for smoothies or drinking straight.

Freeze in an airtight container with room for expansion, or in ice cube trays for easy portioning. Use within 3 months for best quality. Thaw overnight in the refrigerator and shake or mix briefly before use.

  • White to creamy white in color
  • Separate layers that recombine after shaking or mixing (normal for canning)
  • No mold, no unusual bits, no goo

  • A sour, rancid or fermented smell
  • Yellow, gray or pink in color
  • Chunky or gooey texture that doesn’t smooth out after stirring
  • Visible mold anywhere in the container
  • A can that is swollen, rusted, or severely damaged before opening
