Canned coconut milk it’s thick, high in fat, and made with very few ingredients: usually coconut, water, and sometimes guar gum as a stabilizer. It is shelf stable for years when closed due to the airtight can and the low water activity generated during processing. Once opened, it should be used quickly.
Cardboard coconut milk it is a thinner, diluted product designed as a milk substitute. It contains additional stabilizers, preservatives and often added vitamins and minerals. The shelf-stable cartons, found in the non-refrigerated aisle, are processed using aseptic containers and have a shelf life of 6 to 12 months. Refrigerated cartons, in the case of milk, are not stable and should be treated like dairy milk: keep cold and use before the printed date.

Canned coconut milk is separated into two layers: a thick, solid white cream on top and a thinner, watery liquid below. This is because the saturated fats in coconut milk solidify at room temperature and especially in the refrigerator. This is completely normal and not a sign that the milk has gone bad.
To use, shake the can well before opening, or gently heat and stir the contents. The layers will recombine into a smooth, creamy liquid.
What you’re looking for to identify true spoilage is different from separation: a pungent, colorless, slimy, or moldy smell. If the milk separates but smells clean and slightly sweet, it’s fine. If it smells sour or is gray or yellow, discard it.

Do not store leftover coconut milk in an open can. The metal in the lid of the can can become acidic when air is introduced, affecting the taste and quality over time. Yes, although there is a texture trade-off. Frozen coconut milk tends to become lumpy or sour after thawing because the freezing further breaks up the fat-water emulsion. It can still be perfectly used in cooked dishes such as curries, soups and sauces where the texture blends into the dish. It is not ideal for drinking or for recipes that require a smooth, creamy texture.
To freeze, transfer to an airtight container or ice cube tray, leaving room for expansion. Use within 3 months for best quality. Thaw overnight in the refrigerator and shake or mix briefly before use.
