Cucumber Cream Cheese Sandwich

Cucumber sandwich bites
Creamy and crunchy custard sandwiches are packed with classic flavors. It offers seasonal spices and seasonings.
Herbed Cream Cheese Spread
- 8 Oz Cream cheese (soft)
- ¼ Cup Crumbled feta cheese (or up to 1/2 cup)
- ¼ Cup Green onion (thinly sliced)
- 2 TBSP Fresh parsley (cut off)
- 1 TBSP Fresh dill (cut off)
- 1 tsp Lemon juice
- ¼ tsp Garlic powder
- ¼ tsp Onion powder
- ¼ tsp Salt
to serve
- 1 Cup Microgreens
- Black pepper (new cracked)
- Butter lettuce leaves (optional, for wrapping)
- Yeast or sprouted grain bread (optional)

Cut the cucumbers into thin slices or rounds (about ?–¼ inch thick).

Place the cucumbers in a bowl. Sprinkle with salt and pour in enough vinegar to cover. Let sit for 10-15 minutes.

Drain the cucumbers and place them on a clean towel. Dry it well.

In a medium bowl, combine cream cheese, feta, green onion, parsley, dill, lemon juice, garlic powder, onion powder, and salt. Blend until smooth and completely combined.

For Cucumber Bites (no bread): Top slices of pumpkin with a small amount of cream cheese mixture. Add microgreens and a pinch of black pepper.

For the salad dressing: Spread cream cheese over lettuce leaves, add cucumbers and microgreens, then fold.

For the sandwich: Spread cream cheese on sliced sourdough or your favorite bread. Cover with cucumbers and microgreens, then chop.
