Valentine’s day It’s a day when many of us take the opportunity to tell our loved ones how much we appreciate them. Whether that’s a significant other, the ladies in your Galentine’s group, or your kids, these chocolate covered raspberry bites are a great way to do just that.

I’ll make these with some cute heart molds perfect for Valentine’s Day. You can use any silicone mold you want, even if you are making molds. And instead of simply dipping strawberries in chocolate, we first make a raspberry filling. It is naturally sweetened and thickened with maple syrup. Chia seeds.

Research shows that maple syrup is not just sugar, but a unique combination of minerals, antioxidants, and anti-inflammatory compounds. Chia seeds are an excellent source of fiber, but they have many other benefits. These include supporting healthy blood pressure and digestion, reducing inflammation and caring for the gut, helping to improve symptoms of anxiety and depression.

Then there are the juicy strawberries, which are packed with vitamin C, fiber and antioxidants. These chocolate covered raspberry bites are naturally colorful, fun to decorate and great for little helpers in the kitchen. My younger kids had no problem making these. Plus they’re gone in the afternoon!

Tips and tricks

You can use a different mold, but I chose heart molds for these. If you don’t have a good thing Silicone mold With their hands, then you can do them without one. Simply scoop a small dollop of jam onto parchment paper, freeze, and then dip in chocolate to make rustic bites.

Start with a small amount of maple syrup, taste and adjust to your preference. I prefer mine to be more on the strong side. These products store well in the refrigerator for a week. You can also keep it in the refrigerator for up to 1 month. Fair warning: you may need to double the package if you want any leftovers for the freezer.

They taste like chocolate covered raspberry jam… but better.

Adding an option

  • 2 TBSP Freeze-dried strawberries or strawberries (crushed)
  • In a bowl, whisk the raspberries with the maple syrup, chia seeds and vanilla until thick and jam-like. Let the chia rest for 5-10 minutes to thicken.

  • Pour the mixture evenly into 10 large 2-inch silicone heart molds, filling to the top and smoothing the surface.

  • Refrigerate for at least 4 hours or overnight until completely firm.

  • Gently melt the dark chocolate and coconut oil until smooth.

  • Remove the frozen hearts from the mold and dip into the chocolate until completely coated.

  • Sprinkle with freeze-dried berries, if desired.

  • Place on a baking sheet lined with baking paper and refrigerate for 10-15 minutes.

  • Serve straight from the fridge or allow to soften a bit before eating.
